Onion soup au gratin, flavoured with Lindemans Gueuze

Starters

Ingredients

  • 6 onions
  • 120 g grated cheese
  • 2 bottles Lindemans Gueuze
  • 2 garlic cloves
  • 100 g smoked bacon, diced
  • 200 ml beef stock
  • salt and pepper
  • thyme

Directions

  1. Peel and slice the onions.
  2. Peel the garlic cloves and cut finely.
  3. Fry the onion and garlic together with the smoked bacon in a saucepan.
  4. Pour in the beef stock and the Lindemans Geuze.
  5. Season with pepper and thyme.
  6. Allow to simmer for 30 minutes over gentle heat.
  7. Taste and add salt and pepper if so desired.
  8. Divide the soup between four bowls and top with grated cheese.
  9. Place the bowls briefly under a hot grill until the cheese is golden brown.
  10. Serve immediately.
