Ingredients
- 6 onions
- 120 g grated cheese
- 2 bottles Lindemans Gueuze
- 2 garlic cloves
- 100 g smoked bacon, diced
- 200 ml beef stock
- salt and pepper
- thyme
Directions
- Peel and slice the onions.
- Peel the garlic cloves and cut finely.
- Fry the onion and garlic together with the smoked bacon in a saucepan.
- Pour in the beef stock and the Lindemans Geuze.
- Season with pepper and thyme.
- Allow to simmer for 30 minutes over gentle heat.
- Taste and add salt and pepper if so desired.
- Divide the soup between four bowls and top with grated cheese.
- Place the bowls briefly under a hot grill until the cheese is golden brown.
- Serve immediately.
